Raw Superfood “Blizzard” Recipe

For those who follow my blog and don’t know me personally,  I apologize for my absence – it has been a crazy few months. From house hunting, to celebrating my daughter’s 2nd birthday, to actually buying our first home, my mind has been elsewhere, but the rollercoaster of emotions has been incredible!  I put blogging on the back burner and took a break to focus on all that was in front of me.

Cooking and experimenting with recipes helps calm any anxiety I may be feeling – my kitchen is like a sanctuary, sort of therapeutic, if you will. If you follow me on Instagram, you probably noticed most of my photos were of smoothies (and my daughter) – they were the easiest to make and created the least amount of prep and mess…I don’t feel comfortable bringing chaos into someone else’s kitchen, so the seven months we spent living with my parents, we kept it simple and safe!

While going through some of our boxes, I found one of my notebooks filled with recipes I came up with and ones I modified to suit our food restrictions. Now that we’re in our own home and we’ve pretty much got our kitchen set to go, I plan to share some of these recipes with you. The first one I would love to share, is one I created about four years ago, and I promise, it’s a good one!!

When I shared a “teaser” photo on Instagram of this creation, I had originally called it a Raw “Butterfinger” Blizzard…but then it dawned on me, it’s been YEARS since I’ve had a Butterfinger, and quite honestly, I don’t fully remember what it tastes like! So, instead, I’m calling it a Superfood Blizzard – it’s super creamy, thick, caramelly, nutty, crunchy, with just the right amount of sweetness. The main superfood ingredient in this sweet treat is raw Lucuma powder, which is packed with minerals, antioxidants, iron, calcium, vitamin B3, and more! You can sometimes find Lucuma in your local natural food store – we buy ours online either through Amazon or Vitacost.

RAW SUPERFOOD BLIZZARD: vegan, gluten-free, soy-free, refined sugar-free

What you need:

  • 1/2 cup raw hazelnuts (filberts)
  • 1/2 cup raw walnuts
  • 2-4 pitted Medjool dates
  • 1-2 Tablespoons Lucuma (depends on your taste preference)
  • 1 Tablespoon raw coconut sugar
  • 1 Tablespoon pure maple syrup (optional)
  • pinch of pink Himalayan sea salt
  • 1 1/2 cups cold filtered water
  • 4 cups ice
  • 2 Tablespoons raw cacao nibs
  • extra cacao nibs and coconut sugar for topping

What to do:

  1. Blend all, but the ice and cacao nibs until smooth on high speed.
  2. Add the ice and cacao nibs and blend again. If you do not have a high-speed blender (such as a Vitamix), I recommend stopping the blender often to stir, making sure it’s blended evenly…because this is THICK!
  3. I sprinkled a small amount of coconut sugar in the bottom of a tall glass and then poured in the mixture.
  4. Top with more coconut sugar and cacao nibs.
  5. ENJOY!!!

This makes A LOT and could probably serve up to as many as 5-6 people, depending on how big you want the servings to be. If you want more of a smoothie/shake consistency, just lessen the amount of ice. You could easily halve the recipe OR freeze what you can’t eat. Once frozen, you can enjoy it as an ice cream or let it sit at room temperature for a bit to reach more of a “blizzard” consistency.

Raw Superfood Blizzard

One of the best things about this recipe, is you can easily add other ingredients to the mixture itself, such as raw cacao powder, ground vanilla bean, maca, raw mesquite powder, and much much more! Oh! And the toppings are endless! If you don’t have raw cacao nibs on hand, you can use chocolate chips – my favorite brand is Enjoy Life because they are free of the common allergens, such as dairy, soy, and gluten.

    I realized I never left a comment on your blizzard! This looks heavenly and I love the coconut sugar, that is one of my favorite sweeteners. I really only use maple syrup or coconut sugar and on occasion, agave. I definitely need to try this since I love every ingredient!
