Strawberry Kombucha Pops

I don’t know what it’s like by you, but here in Bend, OR, it is HOT. It feels like it’s been near 100° for at least two weeks and since we don’t have AC, all I’ve been living on is smoothies and salads…and sitting in front of a fan…or in a cramped kiddie pool with Willow! Two of my favorite things about summer though…BERRIES and kombucha!! A couple of years ago, I shared a recipe on Instagram for a kombucha smoothie bowl where I made kombucha ice cubes and blended it with various fruits and nut milk…it was super delicious! It wasn’t until this summer where I played around with kombucha popsicles.

The flavor possibilities are endless: fresh fruit + kombucha + coconut milk! And depending on your taste/sweetness preference, you can add a touch of maple syrup.

Below is our current favorite and if you love strawberries, you should definitely give this recipe a try! And if you don’t have popsicle molds, you can make ice cubes which are really great to blend into your smoothies or smoothie bowls!

We have a set of six popsicle molds, so when I make a batch of this recipe, I have extra to turn into ice cubes.

Ridiculously easy to whip up, super refreshing, and kid-approved! It’s the perfect summer treat!

STRAWBERRY KOMBUCHA POPS

Yields 8-10 popsicles depending on size of molds.

Ingredients:

  • 2 cups fresh, organic, chopped strawberries
  • 1 cup Townshend’s Brew Dr. Strawberry Basil Kombucha
  • 1 cup unsweetened coconut milk*
  • Optional: 1 tsp vanilla extract
  • Optional: 1/2-1 TBSP pure maple syrup
  • How To:
    1. In a high-speed blender, purée the strawberries until smooth.
      Next, add in remaining ingredients and blend until smooth. Adjust sweetness level if desired.
      Pour into popsicle molds or ice cube trays and freeze overnight.
      ENJOY!

    Notes:

    ***We like to use Native Forest Organic Coconut Milk (Simple) as it doesn’t contain any guar gum. It’s just coconut + filtered water. This is a personal preference, but I do know the varieties that contain gums often times add an extra level of creaminess, but sadly gums just don’t agree much with my gut!

    ***Cant find this specific kombucha flavor??? No problem! GT’S makes a strawberry flavor kombucha or you can use any flavor/berry combination of your choice. Mango popsicles are really good too, but berry season is my favorite!
