RECIPE: Raw Ranch Kale Chips

I’m not exaggerating when I say that we go through 5-6 bunches of organic kale a week. My body literally craves it! Our favorite ways to enjoy kale: lightly sauteed, thrown in a smoothie, salads and kale chips!

The possibilities are endless when it comes to chip flavors and since we’ve been on a big ranch dressing kick lately, we thought ranch kale chips would be perfect! These are so simple to throw together and you can use the leftover ranch dressing for salads, wraps or veggie burgers…or toss it with another bunch of kale!

My little assistant helped me tear the kale from the stems, make the dressing and happily licked the Vitamix clean…and quickly grabbed for some when the chips were finally ready! I love having these on hand for a healthy toddler snack.

RAW RANCH KALE CHIPS: {raw, gluten-free, soy-free, oil-free, vegan}

What you need:

  • 1 bunch of organic kale
  • 3/4 cups raw cashews (soaked for at least 4 hours)
  • 2 Tablespoons raw hemp seeds
  • 1 Tablespoon fresh lemon juice
  • 3/4 teaspoon dried dill
  • 1/2 teaspoon granulated onion
  • 1/2 teaspoon granulated garlic
  • salt to taste
  • 1/2 cup + 3 Tablespoons filtered water*

*more or less depending on the consistency you prefer.

How to:

  1. Tear the kale away from the stem into desired size, wash, and dry thoroughly. If you have a salad spinner, I highly recommend throwing the kale in there to get the excess water off.
  2. Drain and rinse your cashews; add to high-speed blender.
  3. Add the remaining dry ingredients, lemon juice, and 1/2 cup of water to start. Blend until smooth, adding more water if needed (or desired). I used an additional 3 Tablespoons of water to make it easy to pour, but not runny. Salt to taste.
  4. In a large mixing bowl, toss the kale with 1/4 cup of the ranch dressing – adding more, as needed, to evenly coat the kale. A thicker coating will will lead to longer dehydrating time. You can sprinkle extra salt, hemp seeds or dill at this time.
  5. Place the kale in a single layer on your dehydrator sheets. Mine filled two Excalibur sheets. Set the temp for 105-115° and allow to dry for 5-8 hours (depending on your dehydrator, temp, and thickness of coating).
  6. Store leftover ranch dressing in an airtight container (in the fridge) and kale chips are best stored in glass jars. ENJOY!

    You are a mind reader! I was just browsing for a new recipe for kale chips! I will most definitely try these!     I bet these would be delicious both pre and post dehydrating! Ranch kale salad, ranch kale chips, I want both! I know I don’t eat enough kale. Baby kale I get plenty of, but i rarely buy the big stuff because I have trouble getting through it all. I actually only buy it if I’m planning on making kale chips, because I can eat TONS of those! I love the ranch flavor, one of my favorite dressings (isn’t it everyone’s fave?) and they look so coated with flavor still even after dehydrating! Second picture from the end is my favorite ❤ I might have to give these a try in my oven on low…or just make the dressing and go to town with some baby carrots 😀

      Thank you, Natalie!! They’re really good pre dehydrated, too! Right? Ranch is such a favorite – and good on everything! I remember growing up I used to dip my pizza crust in ranch dressing…crazy to think about all the junk that was in there, so it’s nice to have a healthier option now! Funny you should mention baby kale because I almost bought a thing of that from Costco today! We just sauteed a bunch of kale today and it’s so funny because it always looks like a TON, but it shrinks down so much! When you make kale chips, do you season them at all? Do they turn out well in the oven? I’ve only made them in the oven once, a long time ago and they got super crispy! Haha!! that’s my favorite picture, too!         I usually just do salt and pepper when I bake them in the oven. I just do them on like 400 for like 10 mins or something and they are super crispy that way. I don’t know if they would get crispy with an actual sauce on them or not, might have to go with more of a low and slow approach. Idk, it will be an experiment!

        MMMM! I love salt and pepper kale chips! And good to know that you can bake them up that quickly – sometimes I get super impatient and just want them right then…especially with an antsy/hangry child hanging on me! Yeah, I bet you’d have to do the low and slow approach with a sauce coated kale chip, but now I’m curious – might have to try the oven method next time!

    Major YUM!! I laughed because I eat a TON of kale chips every week too. In fact, I just posted a picture on Facebook yesterday of kale chips, lol! Olivia and I can’t get enough of them! I’m usually craving them so bad and quick, so I am too lazy to ever add sauces, but I bet ranch would be yummy! I’ve seen so many neat dressings and flavorings for kale chips and I imagine these are heavenly! I love those pics of Willow, she looks so so adorable!! I literally just give Olivia a plate of them and she goes to town, haha!

      Oh, that’s hilarious!!! Sometimes I miss FB because I feel like everyone is on there more. I love that Olivia plows through kale chips, too! They’re SO good! I usually do a cheesy kale chip or my salted caramel ones so the ranch was a nice change…although, sometimes just a simple salted kale chip is perfect! The possibilities are endless!!     Ah! Kale chips! I’m not a big fan, they’re okay, but I may just need to try them again! It’s been years since I’ve made them…and if I make them this way…coated in cashewy goodness, I think I may just fall in love, head over heels!

    The little nibble picture is so cute! We love kale chips too. But I have yet to find a store bought variety I like, so we always just make them. Only problem is we eat them all in one sitting! LOL. I love the ranch idea. So yummy!!
