Nothing says summer like a cold fruit smoothie. This morning I decided to try my hand at making a Blue Sunset…I’ve seen many variations of this drink – some using oranges, strawberries, spinach, coconut oil and much, much, more. Here’s what I came up with:
Blue Sunset:
2 cups pineapple chunks
1 cup diced mango
1 frozen banana
1 1/2 – 2 cups fresh hazelnut milk (or any nutmilk)
ground vanilla to taste (I used approx 1 tsp)
pinch of Himalayan salt
1 cup blueberries
Directions:
Blend all the ingredients, except for the blueberries, until smooth. Pour about half of the mixture into glasses until approximately halfway filled. Next, add the blueberries and blend again until smooth. Carefully pour this mixture over the first half. I did not add any sweetener to this recipe because fruit is naturally sweet. If you feel it needs a touch more of sweetness, I recommend adding a couple of pitted dates, coconut nectar or pure maple syrup.
For this recipe, you can use fresh or frozen fruit. Typically just using a frozen banana will turn any drink into a milkshake-like consistency. If you don’t have fresh nutmilk, you can use coconut water (it just won’t be as creamy).
