If there’s one ingredient I miss more than anything, I would have to say oats. They’re so versatile that they’re pretty much found in EVERYTHING. Granola is probably my most missed oat-y treat and I needed to find a replacement to top my smoothie bowls with. Whether crunchy or chewy, I loved that sweet and often times nutty goodness. While this specific recipe isn’t going to be exactly like the granola you’re probably used to as it’s obviously lacking rolled oats, it does have some “clusters” of nutty deliciousness AND it all comes together in just a few minutes.
I used to LOVE rawnola (dates + gluten-free rolled oats), but when my oat sensitivity returned, I started playing around with a substitute – while this method won’t be nearly as low-fat, the variety of nuts bring some excellent health benefits (iron, selenium, calcium, protein, magnesium, and antioxidants). Ever since seeing my sweet friend Natalie’s latest rawnola recipe over at Feasting on Fruit, I’ve been anxious to throw in some lemon zest…if you haven’t seen her rawnola creations, definitely check them out!
Why did I choose raw walnuts, Brazil nuts, and almonds? Because they’re some of the healthiest options! Not only are they packed with an abundance of nutrients, but they’re also excellent for brain health, heart health, and the prevention of cancer.
Excellent in a bowl with a splash of nut milk, as a topping for ice cream, smoothie bowls, or as is! The Brazil nuts and pinch of salt add a wonderful flavor to this simple recipe. This is also a great base to play around with flavors/spices of your choice…I do have another recipe in the works for you using this raw granola, so stay tuned 🙂
RAW “GRANOLA”
Makes approximately 3.5-4 cups
What you need:
- 1.5 cups packed, pitted Medjool dates (approximately 22-24)
- 1/2 cup raw, organic walnuts
- 1/4 cup raw, organic Brazil nuts
- 1/4 (heaping) raw, organic almonds
- 2 Tablespoons shredded coconut
- 1/2 teaspoon vanilla (ground or extract)
- pinch of Himalayan salt (optional, but highly recommended)
How to:
- Throw all of the ingredients in a food processor and pulse until everything is broken up and starting to clump/stick together. If you’re noticing that the mixture isn’t really sticking, add a few more dates and pulse again.
- You can either enjoy right away OR spread the mixture (in an even layer) onto a parchment paper lined dehydrator tray and set it at 115°F overnight. I love it both ways, but it’s REALLY good straight out of the dehydrator – it produces a warm, slightly crispy, yet chewy texture.
- Best stored in a glass, air-tight container in the refrigerator.

I’m so glad you came up with this! No smoothie bowl should ever be rawnola-less. Plus yours is actually raw where as mine is just pretending lol. And this is so nutrition packed too! I’ve never thought of adding a pinch of salt, I bet that makes a big difference. I know it does with non-raw granola anyways. I can’t wait to see how you use it 🙂 Thanks for the shoutout too ❤

Even without having a sensitivity to oats, I think this recipe sounds wonderful! I love using different variations of crumbly, crunchy things on my smoothies too, so I’ll definitely be giving this a try 🙂
As a random side note, I’ve been following you on Instagram for a while now since a friend of mine in Bend told me I should, but I only just realized I never read your blog or checked out your Etsy shop! I have to say, I wish I had looked sooner, I love the content you have going! And your products look AMAZING, do you sell them anywhere locally? I would love to try them out, I was just in Bend this weekend and usually try to get over there about once a month. If not, I’ll just have to order something on Etsy 🙂

Oh girl this looks so good!! You know I’m a huge nut lover!! I love all 3 nuts you chose too, I eat almonds and walnuts often and pecans I bet would so good in this too, so buttery! I think this would be so good with so many variations because it’s just a perfect and easy recipe. Would you believe I’ve never had a rawnola? I love the baked kind so much and not a big fan of dates (I know, gasp!) so I’ve never wanted it but oh man, you are making it look so delicious!! And YES, on the salt. Food just doesn’t taste that good or right without a pinch of salt, it really brings out all the flavors of everything!!

Thank you!!! Haha!!! I know you don’t like dates 😂😂 I used to hate them and actually think they were gross…I thought they looked too much like a big bug or something! I would honestly take baked oat-y granola over this, but oats just cause a lot of issues for me still. So bummed! And what’s funny is that I was going through some of my old posts here on the blog and came across my camping one from last year…we ate your granola every day on that trip! So good. A lot of people are anti-salt and while I’ve certainly cut back quite a bit in my cooking, I feel some recipes just need it! Thanks, again!! ❤️❤️

I’ve been wanting to try rawnola for awhile now after seeing Natalie’s recipe as well! And now i have TWO to try!! I need to get in the kitchen and try one or two of your latest recipes soon! Love all the nuts, and this would go perfectly on some vegan yogurt i have!

Rawnola is wonderful and super simple to throw together!! And perfect for summer when you can’t turn on the oven to bake. ☺️ Do you make your own yogurt?
